Creamy Vodka Butter Beans

INGREDIENTS:
- 1 clove of garlic
- 2 medium shallots
- 2 tablespoons passata (tomato sauce)
- 1 shot of vodka
- Vegetable oil
- 1 teaspoon lemon juice
- 1 teaspoon butter
- 1 can of butter beans, drained and rinsed
- 1/2 cup half-and-half (half cream, half milk)
- Parmesan cheese, for garnish
- Chilli flakes (optional)
- Fresh parsley, for garnish
- 1 teaspoon balsamic oil
INSTRUCTIONS:
- Finely dice the shallots and mince the garlic clove.
- Heat a pan over medium heat and add a splash of vegetable oil.
- Add the diced shallots to the pan and cook for about 5 minutes until they become translucent. Season with salt.
- Stir in the minced garlic and cook for an additional 2-3 minutes, stirring to combine.
- Add the passata (tomato sauce) to the pan and mix well with the shallots and garlic.
- Slowly pour in the half-and-half, stirring continuously.
- Pour in the shot of vodka and continue cooking for another 3-4 minutes to allow the flavors to meld together.
- Add the drained and rinsed butter beans to the sauce and gently stir until everything is well combined and the beans are warmed through.
- Squeeze in the fresh lemon juice and add the teaspoon of butter. Stir until the butter melts and incorporates into the sauce.
- Serve the creamy vodka butter bean sauce over cooked pasta of your choice.
- Garnish with freshly ground black pepper, chilli flakes (if desired), freshly grated Parmesan cheese, and a sprinkle of fresh parsley.
