Tomatoes, Halloumi and Blackberries Salad
As summer arrives, it’s the perfect time to indulge in light and refreshing salads that showcase the season’s vibrant flavors. In this recipe, I combined the juicy sweetness of tomatoes, the creamy saltiness of halloumi cheese, and the tartness of blackberries.

Serving: 1 serving
INGREDIENTS:
- 2 ripe tomatoes, sliced
- 2 tablespoons extra-virgin olive oil
- Juice of half of the orange
- Salt, to taste
- 1/2 cup of blackberries
- 1 slice of watermelon
- Fresh basil mint, for garnish
- 1 pack of halloumi
INSTRUCTIONS:
In a serving plate, arrange the sliced tomatoes.
Add sliced watermelon, blackberries.
Heat the skillet, add tablespoons of olive oil and fry sliced halloumi for 3-4min on each side (until gold brown)
Add halloumi on the serving plate.
Garnish the salad with fresh mint leaves for an added touch of freshness.
Drizzle with olive oil, orange juice and sprinkle with salt.
