INGREDIENTS:
- 7 ounces (200g) silken tofu
- 3.5 ounces (100g) dark chocolate (70% cocoa or higher), chopped
- 2 tablespoons unsweetened cacao powder
- 2 tablespoons maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: shaved dark chocolate, fresh berries, or chopped nuts
INSTRUCTIONS:
Melt the dark chocolate: Place the chopped dark chocolate in a heatproof bowl and melt it using a double boiler or by microwaving in short intervals, stirring frequently until smooth. Set aside to cool slightly.
Prepare the tofu: Drain any excess liquid from the silken tofu and transfer it to a blender or food processor.
Blend the ingredients: Add the melted dark chocolate, cacao powder, maple syrup, vanilla extract, and a pinch of salt to the blender with the tofu. Blend on high speed until all the ingredients are well combined and the mixture is smooth and creamy. Taste and adjust the sweetness if desired by adding more maple syrup.
Chill and set: Divide the mousse mixture evenly between two serving glasses or bowls. Cover and refrigerate for at least 2 hours or until set.
Serve: Once the mousse has chilled and set, remove it from the refrigerator. You can top it with shaved dark chocolate, fresh berries, or chopped nuts for added texture and flavor. Serve and enjoy!
