Toast with Radish Leaves Pesto

Twist on traditional pesto – Radish Leaf Pesto. Often overlooked, radish leaves bring a peppery and slightly bitter flavor that adds a delightful dimension to this homemade pesto. Paired with creamy burrata cheese. Spread this vibrant pesto on a slice of toasted bread, and you have a simple yet elegant appetizer or light meal that celebrates the freshness of seasonal ingredients.

INGREDIENTS:

  • 1 cup radish leaves, washed and dried
  • 1/4 cup roasted cashews
  • Lemon peel, lemon juice
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • 2 tablespoons of ricotta
  • 2 sliced of bread, toasted

INSTRUCTIONS:

  1. In a food processor or blender, add the radish leaves, roasted cashews, lemon peel and juice, and grated Parmesan cheese.

  2. Pulse a few times to break down the ingredients.

  3. While the food processor is running, gradually drizzle in the olive oil until the mixture becomes smooth and well combined. If needed, scrape down the sides of the processor bowl or blender jar to ensure everything is blended evenly.

  4. Add salt and pepper to taste, and pulse a few more times to incorporate the seasoning.

  5. Taste the pesto and adjust the salt and pepper if desired.

  6. Transfer the radish leaves pesto to a small serving bowl.

  7. Toast the bread, spread with ricotta and then radish leaves pesto, add fresh radish and drizzle of olive oil.
