Syrniki with sour cream and blueberries

Fluffy cottage cheese syrniki that are both comforting and satisfying. Syrniki are a beloved breakfast or brunch dish made from a mixture of cottage cheese, eggs, flour, and a touch of sweetness. They are crispy on the outside, while remaining soft and creamy on the inside. Whether you enjoy them plain, with a dollop of sour cream, or a drizzle of honey, Syrniki are sure to become one of favorites in your breakfast repertoire.

INGREDIENTS:

  • 1 lb farmer’s cheese
  • 1 egg
  • 4 tbsp semolina flour (or all-purpose flour)
  • Additional flour for working with the dough
  • ¼ teaspoon salt
  • 2 tablespoon sugar
  • 1 tablespoon vanilla extract or vanilla sugar
  • 1⅝ oz. sunflower oil (about 3½ tbsp)

INSTRUCTIONS:

  1. In a mixing bowl, combine the farmer’s cheese, egg, semolina flour (or all-purpose flour), salt, sugar, and vanilla extract. Mix well until all the ingredients are thoroughly combined.

  2. Let the mixture rest for about 10 minutes to allow the semolina (or flour) to absorb some moisture and thicken the mixture slightly.

  3. After the resting period, the mixture should be firm enough to shape into patties. If it’s still too soft, you can add a little more semolina flour or all-purpose flour until it reaches the desired consistency.

  4. Dust your hands with flour to prevent sticking. Take a small portion of the mixture and shape it into a round patty, about ½-inch to ¾-inch thick. Repeat with the remaining mixture, shaping it into patties. You should get approximately 8-10 syrniki.

  5. Heat the sunflower oil in a non-stick skillet over medium heat. Place the syrniki in the skillet and cook for about 3-4 minutes on each side, or until golden brown. You may need to cook them in batches depending on the size of your skillet.

  6. Once cooked, remove the syrniki from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

  7. Serve the syrniki warm with your choice of toppings such as sour cream, jam, honey, or fresh berries. Enjoy!

Note: Syrniki are traditionally served with  a dollop of sour cream or a sweet sauce. Feel free to customize the toppings to your preference.
