INGREDIENTS:
- 1 honey nut squash, peeled, seeded, and thinly sliced
- 1 large sweet potato, peeled and thinly sliced
- 2 large potatoes, peeled and thinly sliced
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated mozarella
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
INSTRUCTIONS:
- In a large bowl, mix thinly sliced honey nut squash, sweet potato, and potato. Layer half of the mixed slices in the bottom of the prepared baking dish.
- Sprinkle half of the minced garlic over the first layer of vegetables.
- Season the layers with salt and freshly ground black pepper to taste.
- Repeat the process with another layer of the remaining vegetable slices and garlic.
- Pour the heavy cream evenly over the layered vegetables in the baking dish.
- Sprinkle grated Mozarella and Parmesan cheese over the top of the vegetables and cream.
- Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the vegetables are tender when pierced with a fork.
- Remove the gratin from the oven and let it cool for a few minutes.
