Seasonal fall gratin

Delicious recipe for a seasonal gratin made with honey nut squash, sweet potato, and potato.

Serving: 2 servings

INGREDIENTS:

  • 1 honey nut squash, peeled, seeded, and thinly sliced
  • 1 large sweet potato, peeled and thinly sliced
  • 2 large potatoes, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated mozarella
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

INSTRUCTIONS:

  1. In a large bowl, mix thinly sliced honey nut squash, sweet potato, and potato. Layer half of the mixed slices in the bottom of the prepared baking dish.
  2. Sprinkle half of the minced garlic over the first layer of vegetables.
  3. Season the layers with salt and freshly ground black pepper to taste.
  4. Repeat the process with another layer of the remaining vegetable slices and garlic.
  5. Pour the heavy cream evenly over the layered vegetables in the baking dish.
  6. Sprinkle grated Mozarella and Parmesan cheese over the top of the vegetables and cream.
  7. Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the vegetables are tender when pierced with a fork.
  8. Remove the gratin from the oven and let it cool for a few minutes.
