Rice Salad with Chicken, Pineapple and Corn

INGREDIENTS:
- 200g Rice
- 1 Double Chicken Breast
- 400g Canned Pineapple
- 1 can Sweet Corn
- 1 can marinated celery root (optional)
- 3 tablespoons Mayonnaise
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS:
Start by cooking the rice. Once it’s ready, rinse the rice with cold water, and break it up with a fork.
Take one double chicken breast and cook it in chicken broth from the broth cube. Wait until it cools slightly, then cut it into large cubes.
Drain the sweet corn and do the same with the pineapple, but after draining, cut it into pieces similar in size to the chicken cubes.
In a large bowl, mix the rice, chicken, pineapple, and sweet corn.
Add some flavor by seasoning with salt and pepper and adding 3 mayo.
Mix the ingredients and refrigerate the chicken, pineapple, and corn rice salad for at least half an hour, so the flavors will blend better.
