Pumpkin Curry Udon

This comforting bowl of Pumpkin Curry Udon is an essence of cozy fall spirit!

INGREDIENTS:

  • 1 package of udon
  • 2 cups cubed squash, peeled and seeds removed, cut into small cubes
  • 2 cups stock (vegetables, chicken or beef)
  • 2 tbsp olive oil
  • 1 cloves garlic, thinly sliced
  • 1 shallot, finely chopped
  • 1 tbsp curry
  • Chopped scallion
  • parmesan

INSTRUCTIONS:

  1. Cook the udon noodles according to package instructions. Drain and rinse under cold water.

  2. In a large braiser or pan with a lid, steam the cubed squash, onion and garlic in 1 cup of stock until tender, about 10-12 minutes.

  3. Transfer half of the cooked squash to a bowl and set aside.

  4. In the same pan, cook off any remaining water. Add the curry spice. 

  5. The remaining squash blend with a 1 cup of stock.

  6. Add cooked udon noodles, and the reserved squash sauce. Adjust the sauce consistency by adding more water if needed. Toss everything together. Sprinkle with parmesan.
