INGREDIENTS:
- 1 package of udon
- 2 cups cubed squash, peeled and seeds removed, cut into small cubes
- 2 cups stock (vegetables, chicken or beef)
- 2 tbsp olive oil
- 1 cloves garlic, thinly sliced
- 1 shallot, finely chopped
- 1 tbsp curry
- Chopped scallion
- parmesan
INSTRUCTIONS:
Cook the udon noodles according to package instructions. Drain and rinse under cold water.
In a large braiser or pan with a lid, steam the cubed squash, onion and garlic in 1 cup of stock until tender, about 10-12 minutes.
Transfer half of the cooked squash to a bowl and set aside.
In the same pan, cook off any remaining water. Add the curry spice.
The remaining squash blend with a 1 cup of stock.
Add cooked udon noodles, and the reserved squash sauce. Adjust the sauce consistency by adding more water if needed. Toss everything together. Sprinkle with parmesan.
