INGREDIENTS:

  • 2 slices of sourdough bread
  • 1/2 cup fresh peas 
  • 1/4 cup shelled edamame
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons pistachios 
  • 1 ball of burrata cheese
  • Fresh mint leaves,

INSTRUCTIONS:

  1. Toast the sourdough bread slices until golden and crispy. Set them aside.

  2. In a pot of boiling water, cook the peas and edamame until tender. Drain and rinse with cold water to stop the cooking process.

  3. In a food processor or blender, combine the cooked peas, edamame, mint, pistachios, tahini, olive oil, salt, and pepper. Blend until you achieve a smooth and creamy consistency. Taste and adjust the seasoning if needed.

  4. Spread a generous amount of the pea and edamame mixture onto each toasted sourdough slice.

  5. Tear the burrata ball into small pieces and distribute them evenly on top of the spread.

  6. Garnish the toast with fresh mint leaves for a burst of flavor and aroma.
