Pasta with Arugula Green Sauce

This herbaceous sauce combines the peppery goodness of arugula with a fragrant coming from herbs, garlic, and a hint of zesty lemon. Tossed with al dente pasta, this dish transforms into a celebration of vibrant colors, textures, and harmonious flavors.

INGREDIENTS:

  • 8 ounces (225g) pasta of your choice
  • 2 cups packed arugula leaves
  • 1 ripe avocado
  • 1/4 cup fresh parsley leaves
  • 1/4 small onion, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese
  • Buratta Cheese
  • Lemon peel, for garnish

INSTRUCTIONS:

  1. Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. 

  2. In the meantime, in a food processor or blender, combine blanched (30sec in a boiling water) arugula leaves, avocado (peeled and pitted), parsley, sautéed chopped onion and garlic, lemon juice, olive oil, parmesan cheese, salt, and pepper. Blend until smooth and creamy. Taste and adjust the seasoning if needed.

  3. In a large mixing bowl, add the cooked pasta and pour the arugula-avocado sauce over it. Add cup of water from the boiling pasta. Toss gently until the pasta is well coated with the sauce.

  4. Divide the pasta into two serving plates or bowls. Top it with Buratta cheese and grated lemon peels.
