Creamy Mushroom Soup with Noodles

Warm up your soul with a bowl of homemade Mushroom Cream Soup. It’s the perfect comfort food for cozy evenings.

INGREDIENTS:

  • 1 pack of Fresh mushrooms 
  • 1/2 Onion 
  • 1/2 leek
  • 1 small potato
  • 2 tbsp Butter 
  • 500ml vegetable broth 
  • 150ml Heavy cream 
  • Salt & pepper 
  • A pinch of nutmeg 
  • noodles (kluski lane)
  • parsley, for garnish

INSTRUCTIONS:

  1. Sauté chopped onion, leek and potato in butter until fragrant. Put aside.
  2. Add sliced mushrooms and cook until they’re golden brown. Half of them put on the side.
  3. Add rest of the vegetables to mushroom.
  4. Pour in vegetable broth and simmer.
  5. Blend until smooth and return to the pot.
  6. Stir in heavy cream,  salt, pepper, and a pinch of nutmeg.
  7. Simmer for a few more minutes.
  8. Cook noodles (example: pasting) according to instructions on the package.
  9. Serve hot and garnish with fresh parsley.
