INGREDIENTS:
- 2 slices of bread
- 1/2 shallot
- 4 tbsp mascarpone
- 100g oyster mushrooms
- Fresh dill
- Fresh chives
- Lemon peel and lemon juice
- Olive oil
- Salt
- Black pepper
INSTRUCTIONS:
Toast the bread in a medium-high skillet or using a toaster until it reaches your desired level of crispiness.
Slice the shallot and heat a medium-high skillet. Add a pinch of salt to the skillet and sauté the sliced shallot until it becomes caramelized, which will take around 5-8 minutes.
In a separate dry and hot skillet, add the oyster mushrooms. Cook them for about 2 minutes, then add a spoonful of butter to the skillet. Continue cooking the mushrooms for another 2-3 minutes until they become browned and crispy. Remove from heat.
In a bowl, add the mascarpone and whisk it for 2-3 minutes to achieve an airy and smooth texture. Season with salt to taste and add lemon peel for extra flavor.
On a serving plate, place the toasted bread slices.
Spread the mascarpone evenly over the bread slices.
Add the caramelized shallot on top of the mascarpone layer.
Arrange the cooked oyster mushrooms on top of the shallot.
Finely chop fresh chives and sprinkle them over the mushrooms. Add fresh dill as well for added flavor.
Squeeze some lemon juice over the mushrooms for a tangy kick.
Drizzle the toast with olive oil for added richness and moisture.
