  • 2 ripe peaches, halved and pitted
  • 1 tablespoons olive oil
  • 1 tablespoon honey
  • 1/8 cup shelled pistachios, roughly chopped
  • 50 grams goat cheese, crumbled
  • Fresh mint leaves, for garnish

INSTRUCTIONS:

  1. Preheat your grill to medium heat.

  2. Brush the cut side of each peach half with the olive oil and honey mixture.

  3. Place the peaches cut-side down on the preheated grill and cook for about 3-4 minutes, or until grill marks appear and the peaches have softened slightly.

  4. Carefully remove the grilled peaches from the grill and let them cool for a few minutes.
