INGREDIENTS:
- 8 cups mixed salad greens
- 2 cups coleslaw mix (shredded cabbage and carrots)
- 1 green apple, thinly sliced
- 1/4 cup fresh cilantro leaves
- 2 tablespoons apple cider vinegar or lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/2 cup of roasted nuts
INSTRUCTIONS:
In a large salad bowl, combine the mixed salad greens and coleslaw mix.
Add the green apple slices and cilantro leaves to the bowl.
In a separate small bowl, whisk together the apple cider vinegar, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper until well combined. This will be the vinaigrette sauce.
Pour the vinaigrette sauce over the salad and toss gently to coat all the ingredients with the dressing. Sprinkle with roasted mix of nuts.
