Greek-style fish

INGREDIENTS:
- 2 fillets of white fish (such as cod, haddock, or sole)
- 1 onion, finely chopped
- 2 carrot, grated
- 1 parsley root
- 1 leek
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
INSTRUCTIONS:

Heat the olive oil in a large skillet over medium heat. Add the chopped onion, grated carrot, parsley and celery, and sliced leek to the skillet. Cook for a few minutes until the vegetables start to soften.

Stir in the tomato paste, sugar, salt, and pepper. Mix well to combine all the ingredients.

Let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

Place the fish fillets in the milk for about 15 min to remove the smell. Season them lightly with salt and pepper. Coat in the flour and fry on the skillet.

Pour the prepared tomato sauce over the fish, making sure it covers the fillets evenly.

Keep layering the fish and vegetables.

Garnish the dish with freshly chopped parsley.
