Grilled Peach Granola with Roasted Pistachios
This delightful combination of grilled apricots, crunchy granola, and roasted pistachios is a true treat for the senses. The warm, caramelized flavors of the grilled apricots perfectly complement the nuttiness of the granola and the richness of the roasted pistachios.

INGREDIENTS:
- 2 ripe peaches
- 1/4 cup granola (your choice of flavor)
- 1 tablespoon roasted pistachios, chopped
- Maple syrup or honey, for drizzling (optional)
- I cup of yogurt
INSTRUCTIONS:
Preheat your grill or grill pan to medium heat.
Cut the peach in half and remove the pit.
Place the peach halves on the grill, cut side down. Grill for about 2-3 minutes, or until grill marks appear and the peaches soften slightly.
Remove the grilled peach halves from the grill and let them cool for a minute.
While the peaches are cooling, prepare a serving bowl or plate.
Place the sliced grilled peaches in the serving bowl or plate over th yoghurt..
Sprinkle the granola and roasted pistachios over the grilled peaches.
If desired, drizzle honey or maple syrup over the top for added sweetness.
