Gnocchi with Canned Seafood and Cherry Tomatoes

INGREDIENTS:
- 1 pound (450g) gnocchi
- 1 can (4 ounces/113g) canned mussels, drained
- 1 can (4 ounces/113g) canned octopus, drained
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 shallot
- 1/4 cup white wine
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
INSTRUCTIONS:
Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions until they float to the surface. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add finely chopped shallot and minced garlic and cook for about 1 2-3 minutes until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
Add the canned mussels and octopus to the skillet and stir gently to combine with the tomatoes. Cook for about 2-3 minutes to heat the seafood through.
Pour the white wine into the skillet and stir to deglaze the pan, scraping up any browned bits. Cook for about 2-3 minutes to allow the alcohol to evaporate and the flavors to meld together. If desired, sprinkle in red pepper flakes for a bit of heat.
Add the cooked gnocchi to the skillet and toss gently to coat the gnocchi with the sauce and evenly distribute the seafood and tomatoes. Cook for an additional 2-3 minutes until everything is heated through.
Season with salt and pepper to taste. Sprinkle chopped fresh parsley over the top for garnish.
