Chocolate-covered Dates Snack

Ryba po grecku, or Greek-style fish, is a traditional Polish dish made with fish cooked in a tomato-based sauce with vegetables and herbs.

INGREDIENTS:

  • 12 Medjool dates, pitted
  • 1/2 cup almond butter
  • 4 ounces dark chocolate, chopped
  • 1 tablespoon coconut oil
  • 1/4 cup dried strawberries, ground into a powder (you can use a blender or food processor)

INSTRUCTIONS:

  1. Make sure the dates are pitted. If they are not already pitted, carefully remove the pits by making a small incision in each date and removing the seed.

  2. Fill each pitted date with almond butter. You can use a small spoon or a piping bag to make it easier.

  3. Place the filled dates on a parchment-lined baking sheet and put them in the freezer for about 15 minutes to firm up.

  4. Meanwhile, melt the dark chocolate and coconut oil together in a heatproof bowl set over a pot of simmering water. Stir until the chocolate is smooth and completely melted.

  5. Remove the dates from the freezer. Using a fork or toothpicks, dip each date into the melted chocolate, making sure it is fully coated. Allow any excess chocolate to drip off.

  6. Place the chocolate-coated dates back onto the parchment-lined baking sheet.

  7. Sprinkle the dried strawberry powder over the chocolate-coated dates while the chocolate is still wet.

  8. Once all the dates are coated and sprinkled with dried strawberry powder, place the baking sheet in the refrigerator to allow the chocolate to set. This should take about 30 minutes to an hour.

  9. Once the chocolate is set, remove the dates from the refrigerator and transfer them to an airtight container or serving dish.

  10. Serve and enjoy your delicious dates filled with almond butter, coated in chocolate, and sprinkled with dried strawberry powder! They make a delightful and indulgent treat.

You can store the chocolate-covered dates in the refrigerator for up to one week.
