These Yogurt-Marinated Chicken Nuggets are an average fast-food variety. Marinated in a creamy yogurt mixture infused with flavorful herbs and spices, they become incredibly tender, juicy, and bursting with flavor. The yogurt marinade not only adds a delightful tang but also helps to lock in moisture, resulting in perfectly cooked chicken nuggets that are both crispy on the outside and tender on the inside.

INGREDIENTS:

  • 2 chicken breasts, cut into bite-sized pieces
  • 1/2 cup Greek yogurt
  • 1 teaspoon salt
  • 2 tablespoons sriracha
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs

INSTRUCTIONS:

  1. In a bowl, combine the Greek yogurt, Sriracha, salt, black pepper, garlic powder, and paprika. Mix well to create the marinade.

  2. Add the chicken breast pieces to the marinade and toss to coat each piece thoroughly. Make sure all the chicken is well covered with the yogurt mixture. Cover the bowl and refrigerate for at least 1 hour or up to overnight to allow the flavors to infuse and tenderize the chicken.

  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

  4. In a shallow dish, spread out the panko breadcrumbs.

  5. Remove the marinated chicken from the refrigerator. Take one piece of chicken at a time and coat it with panko breadcrumbs, pressing lightly to adhere the breadcrumbs to the chicken. Make sure to coat all sides evenly. Place the coated chicken nugget on the prepared baking sheet. Repeat this process with the remaining chicken pieces.

  6. Drizzle the olive oil over the coated chicken nuggets, or lightly spray them with cooking spray. This will help them become crispy in the oven.

  7. Bake the chicken nuggets in the preheated oven for about 15-20 minutes, or until they are golden brown and cooked through. Flip the nuggets halfway through cooking to ensure even browning.

  8. Once cooked, remove the chicken nuggets from the oven and let them cool slightly before serving.

  9. Serve the yogurt-marinated Chicken Nuggets with your favorite dipping sauce or alongside a salad for a delicious and satisfying meal.
