Cheesecake

I am not biased here, because I love cheesecake and I love all varietes of it. But this recipe, is my personal favorite.

Cooking Time: 1h

Serving: 4 servings

INGREDIENTS:

  • 550 grams (1.2lb) Philadelphia cream cheese 
  • 400 (0.8) grams heavy cream
  • 150 (0.3) grams sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 200 grams (0.45) digestive biscuits.
  • 150 grams melted butter 

INSTRUCTIONS:

  1. Preheat oven to 180 degrees Celcius
  2. Butter and line a round cheesecake pan with parchment paper.
  3. In a food processor, crush the biscuits into a powder and combine with the melted butter.
  4. Add it to the baking pan and press onto the bottom of the pan to create a crust.  
  5. Mix the cream cheese, heavy cream,sugar, salt and eggs in a bowl and beat with an electric mixer until there are no lumps of cheese and the batter is smooth.
  6. Pour batter over the crust and bake for approximately 50 minutes in 365F (190C)
  7. Let cool at room temperature for at least 3 hours before eating.
