INGREDIENTS:
- 550 grams (1.2lb) Philadelphia cream cheese
- 400 (0.8) grams heavy cream
- 150 (0.3) grams sugar
- 1/2 teaspoon salt
- 4 large eggs
- 200 grams (0.45) digestive biscuits.
- 150 grams melted butter
INSTRUCTIONS:
- Preheat oven to 180 degrees Celcius
- Butter and line a round cheesecake pan with parchment paper.
- In a food processor, crush the biscuits into a powder and combine with the melted butter.
- Add it to the baking pan and press onto the bottom of the pan to create a crust.
- Mix the cream cheese, heavy cream,sugar, salt and eggs in a bowl and beat with an electric mixer until there are no lumps of cheese and the batter is smooth.
- Pour batter over the crust and bake for approximately 50 minutes in 365F (190C)
- Let cool at room temperature for at least 3 hours before eating.
