Carrot Banana Cake with Cranberries and Walnuts

INGREDIENTS:
- 300g carrots, peeled and grated
- 1 ripe banana, mashed
- 70g sugar
- 200g all-purpose flour
- 1 tablespoon ground cinnamon
- 1 tablespoon baking soda
- 1 teaspoon vanilla extract
- 1 cup vegetable oil
- 2 eggs
- 1 teaspoon ground ginger
- 1/4 cup dried cranberries
- 1/4 cup walnuts, chopped
- Mascarpone cheese, for serving
- White chocolate, for garnish (optional)
INSTRUCTIONS:
1. Preheat your oven to 356°F (180°C) and grease a baking sheet or line it with parchment paper.
2. In a large bowl, gently whisk the eggs. Add the mashed banana and mix well.
3. Add the grated carrots, sugar, flour, ground cinnamon, baking soda, vanilla extract, vegetable oil, and ground ginger to the bowl. Stir with a spatula or wooden spoon until all the ingredients are well combined.
4. Fold in the dried cranberries and chopped walnuts into the batter.
5. Pour the cake batter into the prepared baking sheet, spreading it evenly.
6. Place the baking sheet in the preheated oven and bake for approximately 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
7. Once baked, remove the cake from the oven and let it cool in the baking sheet for a few minutes. Then transfer it to a wire rack to cool completely.
