Caesar Butter Beans and Artichoke Toast

INGREDIENTS:
- 1 clove of garlic
- 1 anchovy
- 1 tsp Dijon mustard
- 1 tsp mayonnaise
- Squeeze of lemon juice
- 3-4 tbsp olive oil
- 1 tsp butter
- 1/3 cup butter beans
- 1/4 cup artichoke hearts
- Parmesan cheese, for garnish
- 1 slice of sourdough bread (or any bread of your choice)
INSTRUCTIONS:
- In a small bowl, mash the garlic clove together with the anchovy until well combined.
- Add Dijon mustard, mayonnaise, and a squeeze of lemon juice to the bowl. Mix everything together until smooth.
- Slowly pour the olive oil into the mixture while stirring continuously, creating a creamy Caesar dressing. Set aside.
- Heat a pan over medium heat and melt the butter.
- Add the butter beans and artichoke hearts to the pan and sauté for a few minutes until warmed through.
- Toast the slice of sourdough bread until golden and crispy.
- Spread a thin layer of butter on the toasted bread.
- Spoon the butter bean and artichoke mixture onto the bread, spreading it evenly.
- Drizzle the Caesar dressing over the top of the beans and artichokes.
- Garnish with grated Parmesan cheese.
- Finish with an additional drizzle of olive oil and a squeeze of fresh lemon juice.
- Serve the Caesar Butter Bean and Artichoke Toast warm and enjoy!
