Asparagus and Blue Cheese Quiche

Asparagus and Blue Cheese Quiche – A Savory Delight Bursting with Spring Flavors! This savory dish combines tender asparagus spears with tangy blue cheese, nestled in a creamy and perfectly baked quiche filling.

INGREDIENTS:

  • 1 shortcrust pastry (unbaked, at room temperature)
  • 1 tablespoon butter
  • 1 onion, finely sliced
  • 3 slices of bacon, finely sliced
  • 1 bunch asparagus
  • 80g blue cheese, crumbled
  • 4 eggs
  • 1 cup milk or cream
  • Salt
  • Pepper
  • Nutmeg

INSTRUCTIONS:

  1. Preheat the oven to 350°F (175°C).

  2. Roll out the shortcrust pastry and use it to line a tart or quiche pan. Blind-bake the pastry for 10 minutes. To blind bake, line the pastry with parchment paper or foil, and fill it with pie weights or dried beans to prevent it from puffing up. Remove the weights or beans and parchment paper/foil after 10 minutes, and set the pastry aside.

  3. In a frying pan, melt the butter over medium heat. Add the finely sliced onion and sauté for about 3-4 minutes until softened. Then, add the finely sliced bacon and continue cooking until the onion is translucent and the bacon becomes crispy. Remove from heat.

  4. Trim off the hard bases of the asparagus spears. In a separate frying pan, sauté the asparagus spears over high heat for about 3-4 minutes until slightly softened. Remove from heat.

  5. In a bowl, whisk together the eggs and milk or cream. Season with salt, pepper, a pinch of nutmeg, and a sprinkle of chilli flakes.

  6. Pour the whisked egg mixture into the partially baked shortcrust pastry, filling it almost to the top.

  7. Arrange the sautéed asparagus spears on top of the egg mixture. Scatter the crumbled blue cheese evenly over the asparagus.

  8. Place the quiche in the preheated oven and bake for approximately 30 minutes or until the filling is set and the top is golden brown.

  9. Once baked, remove the quiche from the oven and let it cool slightly before serving.

  10. Serve the Asparagus and Blue Cheese Quiche warm or at room temperature, and enjoy this delicious savory treat!
