Apple Pancakes

Polish version of apple pancakes, delicious to serve with powdered sugar or cherry jam or sour cream.

INGREDIENTS:

  • 2 apples
  • 200 ml milk (slightly less than 1 cup)
  • 1 egg
  • 150 g (1 cup) all-purpose flour
  • 1 tablespoon vanilla sugar
  • 1 teaspoon sugar
  • 1/2 teaspoon baking soda
  • For frying: clarified butter, coconut oil, or other vegetable oil

INSTRUCTIONS:

  1. Sift the flour into a bowl. Add vanilla sugar, regular sugar, and baking soda. Mix well.
  2. Add milk and egg, then whisk the ingredients with a whisk until you have a smooth, lump-free batter.
  3. Peel the apples, cut them into quarters, remove the seeds, then cut each quarter lengthwise in half and then into crosswise slices. Add them to the batter and mix.
  4. Spoon about a tablespoon of the batter and place 3 slices of apples onto it in a hot, greased pan. Fry for about 1.5 minutes until golden. Flip and repeat frying on the other side.
  5. Serve with powdered sugar, cherry jam, etc.
